Roll with gnocchi and salad
A colourful proposal for an unforgettable dinner for the whole family. If you like spicier flavours, add a small chili pepper to the tomato sauce.



Ingredients
- 1 ZM Pekpol Ostrołęka spinach roll
- 500 g potatoes
- 50 g wheat flour
- 4 large tomatoes 1 can sliced and peeled tomatoes
- 10 cherry tomatoes
- 20 olives
- 1 onion
- 1 clove garlic
- 1 tablespoon chopped basil
- 1 small package of rocket
- 2 tablespoons balsamic vinegar
- 100 ml water or broth
- 1 egg
- oil
- salt, pepper
- herbs for decoration
Preparation
Boil the potatoes, press them through a press and mix with flour, egg and a teaspoon of salt. Form into a ball and then roll out to form rolls about 2 cm in diameter. Cut crosswise and, pressing with a fork, shape the mix into gnocchi. Cook in batches in plenty of salted water. They are ready as soon as they float to the surface.
Heat the roll in the oven for 15 minutes at 160°C. Bring the water to the boil in a saucepan, slit the tomatoes gently from the bottom and top. Blanch for 20 seconds, remove and cool in cold water. Then peel, remove the seeds and cut into small cubes. Finely chop the onion, garlic and 5 olives and fry in olive oil. Add the tomatoes. Add some water or broth and simmer for 5 minutes. Mix with basil. Season with salt and pepper.
Mix rocket, sliced cherry tomatoes and a few olives in a bowl. Add balsamic vinegar, a pinch of salt and 2 tablespoons of olive oil. Mix thoroughly. Put warm gnocchi, olives, tomato sauce and sliced roll on plates. Decorate the dish with herbs. Serve with salad.
