Salad with white sausage
If you think white sausage only works well roasted with onions or as a addition for sour rye soup, you're sorely mistaken! Also, it tastes great as a main component of a salad. See for yourself!

Salad with white sausage
Want to boil a poached egg but you have just run out of vinegar? Use lemon juice instead. It will work just as well. If you lack the boldness to make a poached egg, do not worry and use boiled or fried eggs.



Ingredients
- 2 ZM Pekpol Ostrołęka white sausages
- 2 eggs
- 1 handful frozen peas
- 1 small head Romaine lettuce
- 1 handful lettuce mix
- 1 small packaging peas shoots and tendrils
- 2 teaspoons wine vinegar
- 2 tablespoons mayonnaise
- 1 clove garlic
- 1 teaspoon mustard
- 1 tablespoon grated Parmesan cheese
- salt, pepper
Preparation
Grill the sausage and then cut into smaller pieces. Wash lettuce mix and pea shoots and tendrils and tear them into smaller pieces with your hands. Cook the peas according to the instructions and temper in cold water.
Prepare the sauce: crush the garlic in a press and combine it with the mayonnaise, mustard, 1 teaspoon of vinegar and Parmesan cheese. Season to taste with salt and pepper.
Cook poached egg. Boil water in a small saucepan. Season with salt and add 1 teaspoon of vinegar. Crack the egg into a small bowl. Reduce the heat and make a swirl with a spoon. Pour the egg into the centre of the whirlpool. Boil for 3 minutes Carefully remove the egg with a slotted spoon.
Put all the salad ingredients into a bowl. Add pieces of sausage and poached egg. Serve with sauce.
