TATAR–STYLE SAUCE
Mix 4 tablespoons of mayonnaise with 30 ml of 30% sour cream and 2 teaspoons of mustard. Cut 5 pickled cucumbers and 5 pickled mushrooms into small cubes. Combine all ingredients with 1 tbsp of chopped parsley, salt, pepper and a little herbs de Provence. The tartar sauce is a wonderful way to enhance the taste of baked potatoes.
SPICY TOMATO SAUCE
Blend 3 red chilli peppers and 2 cloves of garlic with 2 teaspoons of olive oil and 75 ml of tomato puree in a blender. Simmer the whole thing, then season with salt and pepper. When cool, combine the sauce with a bit of chopped coriander. The sauce goes perfectly with grilled meats.
GARLIC SAUCE
Mix 3 tablespoons of mayonnaise with 4 crushed garlic cloves and 5 tablespoons of natural yoghurt. Season with salt, pepper and marjoram. The sauce perfectly complements the taste of pork neck and grilled sausages.
HONEY–MUSTARD SAUCE
Mix 2 tablespoons of mustard with 2 tablespoons of liquid honey, 2 tablespoons of water and 2 tablespoons of olive oil. Serve as an addition to grilled chicken, red meat and vegetables.
ASIAN LIME–GINGER SAUCE
Mix 100g natural yoghurt with 100g mayonnaise, 10g ginger, juice of 1 lime, 1 teaspoon honey and some fresh coriander. Serve as an addition to grilled poultry, vegetables and seafood.
Tzatziki
Grate 2–3 cucumbers and mix with 200 g Greek yoghurt, a pressed clove of garlic, 1 tablespoon of olive oil and chopped dill. Season to taste with salt. The tzatziki sauce is great with grilled chicken and pork neck.
CHIMICHURRI SAUCE
Blend 2 garlic cloves with a blender with a bunch of parsley, a bunch of coriander, 1/2 cup of olive oil, the juice of 1 lime and 1 tablespoon of wine vinegar. Season with salt, pepper, oregano, and basil to taste. Fans of spicy flavours can add some red chilli pepper to the sauce. The sauce goes superbly with poultry and grilled red meat.
