With the right accompaniment of tasty sprouts and mango and beetroot salsa, the black pudding toast is likely to be the star of any barbecue party. So just enjoy it outdoors!

A DELICIOUS SNACK

Black pudding toast

This dish tastes best during a garden barbecue, but it can also be a success when served at home. Just use a greased pan instead of a grill rack.

INGREDIENTS

  • 1/2 packaging ZM Pekpol Black pudding with buckwheat
  • 1 onion
  • 4 slices country bread
  • handful sprouts
  • 1 jar whole pickled beetroot
  • 1 ripe mango fruit
  • 1 tablespoon freshly chopped parsley leaves
  • 1 tablespoon French mustard
  • 2 teaspoons honey
  • 1 teaspoon apple vinegar + some for the salad olive oil
  • salt and pepper

PREPARATION:

Wrap the black pudding and chopped onion in an aluminium foil and put on a hot grill. Sprinkle bread with olive oil and grill until nice and brown.

Sprinkle sprouts with olive oil and vinegar, season with sat. Prepare the salsa: dice the beetroots and peeled mango, then combine with chopped parsley, mustard, honey, vinegar, salt and pepper.

Put black pudding and onion on the toast and decorate with sprouts. Serve with mango and beetroot salsa.
