Pork loin with mushrooms

Pork loin served with fried mushrooms and beetroot purée is the perfect dish for a festive family dinner. The individual ingredients complement each other wonderfully, creating a dish that will not leave you indifferent.

Ingredients

  • 1 ZM Pekpol Ostrołęka Schab Mojej Mamy loin
  • 500 g fresh mushrooms
  • 2 cloves garlic
  • 1 onion
  • 200 ml broth or water
  • 2 beets
  • 50 g butter
  • 1 tablespoon chopped parsley leaves
  • oil
  • salt, pepper

Preparation

Bake loin following instructions on the packaging. Cook beets until soft. Clean the mushrooms and cut into smaller pieces.

Heat oil in the frying pan. Add the crushed garlic and finely chopped onion and fry for 3 minutes. Add mushrooms and fry for another 5 minutes. Add broth or water and cook for 5 more minutes. Add parsley leaves. Season with salt and pepper.

Blend the beetroot and butter with a blender until smooth. Season with salt and pepper. Slice the loin. Serve with mushrooms and mashed beets.
