Pork loin with roasted peppers

Ingredients
- 4 thick slices ZM Pekpol Krotoszyński loin
- 4 red peppers
- 1 garlic
- 10 sprigs thyme
- 2 large apples
- 2 tablespoons sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon lemon juice
- salt, pepper
Preparation
Cut the peppers lengthways into quarters and remove the seeds. Divide the garlic into cloves, but do not peel it. In a bowl, mix the peppers with the garlic, 2 tablespoons of oil, thyme, salt, and pepper. Preheat the oven to 180°C. Bake the peppers for approx. 20 minutes until soft and browned.
Peel the apples and cut into small cubes after removing the seeds. Heat oil in a saucepan. Add the apples and sugar and fry for 3 minutes. Add a little water, cinnamon, and lemon juice to the fruit. When the apples are soft, blend them into a smooth mousse. Towards the end of roasting the peppers, place the pork loin in the oven for 5 minutes and heat it gently but do not let it brown. Serve the pork loin with peppers and apple mousse.
